Keep the roast frozen until 3 to 4 days before preparation. Thaw in the refrigerator.

Roasting Instructions: For maximum flavor and tenderness, preheat the oven to 325° F. Remove the film from roast. Place the roast in a roasting pan, fat side up. Season with black pepper, whole leaf thyme (generous), garlic powder and a whole bay leaf (remove the bay leaf before serving). Rub seasoning over entire fat side and ends of roast.
