Shrimp Salad

 

2 c. cooked shrimp, halved lengthwise and chilled
1 c. thinly sliced celery
1 Tbsp. finely minced onion
1 Tbsp. lemon juice
1/2 c. mayonnaise
Salt and pepper to taste
Romaine lettuce or mixed greens
Thinly sliced tomatoes

In a bowl, mix shrimp with celery, onion, lemon juice, mayonnaise, and salt and pepper to taste. Serve on a bed of greens and thinly sliced tomatoes. Garnish with avocado slices if desired.
