Garlic Parmesan Grilled Cedar Planked Salmon

 

Yield: 4 servings

1 cedar plank* (these can be found in your local hardware store)
4 Tender Filet Salmon Portions
2 cloves garlic, minced
1/4 c. finely grated Parmesan
2 Tbsp. olive oil
Salt and pepper

Start by soaking your cedar plank in water** for at least 2 hours. This will keep it from igniting while on the grill but imparting a mild cedar flavor to your salmon while it's cooking. Start your gas or charcoal grill with a medium fire set up for indirect heat. Place the salmon filets on the cedar plank, making sure to leave a bit of space in between each filet. Sprinkle filets with the garlic, parmesan, oil, salt and pepper. Place the cedar plank on the grill away from the coals (or burner if using gas), cover the grill and cook for about 12 to 15 minutes until the salmon is just cooked through.
*Once you are done using the plank, simply wash in a very mild soap solution and let it dry completely. The next time you want to use it, just soak in water again and you'll be all set to go!
**If you want to play around a bit with this step you could soak the plank in red wine or add some lemon juice to the water.
