Crab Salad

 

2 to 3-lbs. Crab, thawed 1 c. cooked crab meat
1 Tbsp. grated onion (optional)
1/4 c. French dressing
1 c. chopped celery
1/2 c. mayonnaise
2 Tbsp. dry sherry (optional)
Lettuce

Dice the crab meat and add the onion (optional). Combine with the French dressing, and chill for 1 hour. Add the celery, mayonnaise and sherry (optional) and mix well. Place on a bed of lettuce and garnish as desired.

Optional garnishes:
Crab Claws
Olives, radishes, capers and pickles
Hard-cooked eggs

NOTE: This also makes a delicious lobster salad. Simply substitute 1 cup cooked lobster meat for the crab.
