4 two-oz. Tender Filet Tenderloin Medallions sliced in half lengthwise
Salt and pepper
Olive oil for sautéing
8 slices of lightly toasted crostini
Blue cheese crumbles
8 slices of your favorite apple
Lightly salt and pepper the 8 pieces of tenderloin. Heat the oil in a sauté pan over a medium high flame. Place the medallions in the pan making sure not to crowd them. If you need to cook them in two separate batches, that will work just fine. Sauté them to your desired doneness making sure to turn them only once. Place a piece of tenderloin on a slice of crostini. Top with a little blue cheese and a slice of apple and you're ready to make your mouth happy!
