Mushroom Madeira Sauce

 

1-lb. thickly sliced mushrooms
1/4 c. melted butter
1/2 tsp. salt
Sprinkling of pepper
1 finely chopped medium shallot or small mild onion
1 c. prepared brown gravy
1/3 c. Madeira wine
1/2 tsp. chopped parsley
1/2 tsp. crushed leaf thyme

Sauté mushrooms in melted butter until golden brown, adding salt, a sprinkling of pepper and shallot or mild onion. Add prepared brown gravy. Simmer sauce for 5-6 minutes over low to medium heat. Add wine and heat sauce thoroughly without boiling. Add parsley and thyme, then serve sauce with your tender Filets.

Makes enough sauce for 4-5 steaks.
