Jerk Marinade

 

2 habanero peppers, seeds removed
1 medium onion
1/4 c. malt vinegar
1/4 c. oil
2 Tbsp. soy sauce
2 Tbsp. rum
2 cloves garlic
1 Tbsp. dry thyme
1/2 tsp. ground cloves
1/2 tsp. nutmeg
1/2 tsp. allspice
1/4 tsp. cinnamon
Salt

Purée all ingredients in a blender until smooth. Add salt to taste. This is a great marinade on chicken, pork, fish and shrimp. It can also be brushed on as food is being finished on the grill.
