Coffee Crusted Tenderloin

 

1/2 c. ground coffee
2 Tbsp. kosher salt
2 tsp. pepper
1 1/2 Tbsp. brown sugar
1 Tbsp. cocoa powder
4 Tender Filet Beef Tenderloin Steaks
Olive oil

Combine the first five ingredients to make the coffee crust. Press each end of the steaks into the coffee mixture. You don't need to coat the entire steak, only the ends that are going to touch the grill or sauté pan. If you are going to grill the steaks put a touch of oil onto the ends of the steak with the crust on them. This will prevent the crust from burning. If you choose to sauté the steaks, just put a bit of oil in the sauté pan before cooking. These are best done over a medium to medium high heat. Too high of heat or direct flame might burn the crust. Also if you have any leftover crust you can store it in the freezer for next time!
