A great little southwestern twist on the classic lamb with mint!
Yield: 4 servings
1 Tbsp. olive oil for grilling
8 Tender Filet Lamb Loin Chops (4 oz. each)
1 Tbsp. minced canned chipotle pepper
2 Tbsp. minced fresh mint
1 Tbsp. fresh lime juice
1 Tbsp. olive oil
1/2 tsp. salt
Heat grill to medium high heat. Coat lamb chops with olive oil and place over direct heat. It will take about 5 minutes per side to get to medium rare. (Remember that the meat will be less done closer to the bone.) Combine the remaining ingredients in a small bowl and coat both sides of the chops in the last minute or two of grilling. If you have any of the chipotle mixture left after grilling, feel free to use it as additional sauce.
